Serves Two
In a medium lidded pan, heat the oil and gently fry the onion and garlic until soft. Add the bacon and fry until golden.
Stir in the rest of the ingredients, apart from the cheddar. Put the lid on and cook for 10 minutes, stirring occasionally. Remove the lid and cook for 5 minutes more.
Remove the potatoes from the oven, split open , then top with the smoky baked beans and a scattering of grated cheddar to serve.
